Step 1
To determine if eggs are fresh, you need to check the air sac. Fresh eggs have very little air pocket, whereas when they are stale there is a lot. To check if the air pocket is minimal, the egg should sink into a glass filled with water in a horizontal position. If the egg is not very fresh, it will tilt slightly in a semi-horizontal position at the bottom of the glass. On the other hand, if the egg is stale, it will float upright when you try to sink it.
Step 2
Now, if the eggs are broken, the fresh egg has a fat yolk and a gelatinous ring of white surrounding the yolk and another ring of white. When it is not so fresh, the yolk in the center looks slightly flat, the double ring is not so visible, and the albumen is watery. When the egg is stale, the yolk is very flat and the white is just watery.
